It has been nearly 6 months since my last blog post. Time flies when you’re having fun, as they say. In October and early November we spent 10 days in Mexico. In November and December we thrived through the holidays. Plus Dave and I worked hard as that’s always a busy time in restaurants. In

I know, I know. Summer is over. This is truly one of my favorite times of year, when summer produce meets the fall. In Portland summer doesn’t want to quit. It’s supposed to be 86 this weekend, on October 1st! However today is drizzly and gray and perfect for this soup. I made corn chowder
With everything going on right now I’m leaning into frugal and simple meals. It’s not too much of a stretch from normal for us, but I’m trying to be more mindful of my grocery trips to save on gas, and do some actual meal planning. I’m extending that diligence to my blog. This recipe actually
Truthfully, I struggled with what to title this recipe. It is cauliflower that is roasted with spices similar to the taco seasoning packets I grew up eating on ground beef in tacos and burritos. It has plenty of cumin, some garlic, and a little chili. So I toyed with “Taco Seasoned Cauliflower,” which I felt
This soup has only five ingredients aside from salt, pepper, and water, but it’s so delicious that you’ll question how that’s possible. It is very easy to make and can be done in about an hour. I was introduced to pureed roasted cauliflower soup while I was a cook. It is an example of how
Roasted chicken is one of my favorite foods. I don’t have a top ten list, but if I did, roasted chicken would without a doubt be on there. Juicy chicken, crispy skin, and the drippings that fall into the pan create a mélange of textures. We tend to roast 2-3 chickens per month, and I
This white bean and cabbage soup is extremely basic. I debated whether or not to post it because it’s almost too simple. However, it’s a current favorite, and so good that I’m sharing the recipe anyway. This humble soup is also very inexpensive to make. It’s little more than beans, cabbage, onion, garlic, and bay
These “nachos” are so satisfying. They hit most of the flavors I love in real nachos, but with the added nutrition and satiating fiber of sweet potatoes. I mentioned in my Lasagna Spaghetti Squash post how I’m happy to incorporate extra vegetables into my meals when I can. While I’ll never turn down a good
Spaghetti squash has been a normal part of our fall and winter dinner rotation for years. While I do also eat pasta and carbs, I love vegetables too, and I’m always happy to get extra veggies into our meals. We have roasted spaghetti squash with tomato sauce and mozzarella many times over the years, but
There are so many variations of picadillo. This is the way that was made for me by my Mexican co-workers, particularly Rico, Edgar, and Gabe, back when I was a cook. It is ground beef with chunks of diced potato, a little tomato, and chilies, simmered until tender. I generally say carnitas is my favorite
